Meatza!!!

Was watching a video on The Crossfit Journal and these guys were building a Pizza without the cheese and bread...a Paleo Pizza!!! All the goodness you enjoy in a Pizza but without the consequences your body has to go thru afterward!!! Tis easy and delicious!!
Take 2 pounds of lean ground beef and mix and mash with 2 eggs by hand, add seasoning to your liking, we added parsley, garlic, oregeno, and pepper...after mixed, spread your meat crust evenly across a baking sheet

Place meat crust in oven that has been pre-heated at 350, bake in oven for 12mins

Cut up whatever veggies you like on your pie, next time we will chop these a tad bit smaller, u want to stir fry your veggies, you want to cook the veggies just until they are semi cooked, let cool for about 5mins so that you can spread them over your meat crust

Before you add your sauce, you want to scrape off the excess guuk and juice that is on the pan and your meat crust, then spread your sauce evenly over your meat crust, we cooked our sauce with Contadina Roasted Italian Herd tomato sauce and added extra herbs and spices to our liking
Add your favorite veggies on top of your smoothly spread meat sauce crust and then bake in the oven for 10mins at 350
You won't be able to fold your pie in half but sprinkle some crushed red pepper and grab your fork and knife and enjoy your Delicious MEATZA!!!!!

BBQ Chicken Salad

Nothing is harder than trying to cook dinner when you've had a LONG day...well I took this idea from Mark's Daily Apple and his "Big Ass Salad"...I buy a 50/50 mixed spinach and greens packaged salad, bell peppers, baby carrots, and some pecans and dried cranberries from Sprouts (buy in bulk) and then just cook my chicken in the oven and BAM! you got a better salad than you can get at Paradise Bakery!!! Takes no time at all cuz you just cut all your veggies and throw them in the packaged salad container and it stays fresh for literally 2wks in the fridge, you can make dinner or lunch in NO TIME!!!


Bonless Chicken Breast - add TexJoy seasoning and a few tablespoons of Stubb's Spicy BBQ sauce, wrap in foil and put in oven at 375 for 40mins...take out and slice and add to your mixed salad

Fall in love with Breakfast AGAIN

Working 45-50hrs per week, breakfast either didn't happen or consisted of whatever I could settle for at the local coffee joint or corner store...but as I started to explore my own eating habits and started to experiment with breakfast...I found myself falling in love with it again! Breakfast was always something my Dad loved, he loved getting the family together and making something delicious! Now, Pop's idea of breakfast was definitely not healthy (beans, biscuits and gravy, potatoes...chicharron ya know the GOOD stuff) but had some healthy components...eggs, bacon, some veggies if he was doing omelets. During this journey I have found that making a clean and lean breakfast only takes me about 10mins and definitely satisfies my hunger and gives me the fuel I need to operate at full capacity until my next meal. So, NO MORE excuses...get in the kitchen..throw some eggs and veggies together and DO NOT even forget the best part...BACON!!!!!!

1/4 bell pepper...sautee for about 4 mins and then throw the eggs in...scramble to your liking. Bacon..that's easy and then just slice up some avocado......

Not only does it bring back comforting memories but tastes ohhh soo Delicious!!!!!

New Recipe

Bacon Wrapped Jalepeno Porkloin

1 Porkloin - Peppercorn Marinade
6 Strips of Bacon
1 Jalepeno
1 Tablespoon of your favorite BBQ Sauce




Wrap porkloin in foil and place in oven at 375 for 1hr 10 mins then open foil and let porkloin sit in oven for 10min so bacon gets crispy then turn porkloin over and let sit in over for additional 10 mins


Enjoy this piece of heaven!!! Ahh Delicious!!!!!!!!

Live to Finish

Live to Finish...whatever do you mean? Too many times do we find ourselves starting something or want to start something but rarely do we finish. They say the hardest part of doing something is finding a starting point. I meet people everyday who don't know where to start and with health and fitness it seems even harder to start something. Hopefully through my blog and or links to other blogs or through involvement of followers it will be easier to start improving your health and fitness. Being healthier and more fit you're able actually LIVE LIFE and not be restricted by health or fitness problems and you can actually find yourself Starting more and FINISHING WHAT YOU'VE STARTED! By no means am I an expert but I'm pretty smart in that I can learn from others and use my own experiences to share. Life throws a lot of curveballs and a lot of us are like Serrano from the movie Major League and just can't seem to hit'em, but if you have the desire and will and more importantly a support system in place you can start hitting more curveballs and strikeout less. Find someone who believes in you, figure out what is important to you, and then just pick a place to start and there you have your starting point...the rest of the process is all down hill from there!

Paleo Diet on Nightline

People ask me what I've done to lose 36lbs in the last year, well long story short I have found the Paleo Diet...a bit extreme for most people who cannot wrap their minds around breaking the norm. What's the norm?? Everyday life drives us to be consumers of foods that are processed and high in sugar which leads to inflammation and disease. How many products are there at your local grocery store or pharmacy which are prescribed to treat an upset stomach? Why do you thing your stomach is UPSET with YOU??? Because of what you ate!!!!!
